Spring is the time for foraging in the woods. Tim finds Garlic Mustard, Wild Onions, Redbuds and even a Pheasant Back Mushroom (perfect for two recipes!) First some chuck roast in the dutch oven packed with mushrooms and a thick gravy over mashed potatoes. Then flavor up some bread with onions and garlic for a quick yeast bread recipe, you can even cut into garlic sticks, for the perfect side.

Tim and Nicki’s pear tree is full! Time to pick some pears for a classic old fashioned recipe, Canned Pear Mincemeat. Learn about the history of mincemeat as well as stuff some homemade dough for some Fried Pear Mincemeat Pies. For dinner, take some chicken thighs and marinate in pickle juice and spices then throw on the smoker for the crunchiest skin and most flavor-packed bite of chicken you will ever taste.

We’ve got an abundance of tomatoes and wild plums! Turn the tomatoes into a savory Tomato Pie (with ooey gooey cheese topping). Nicki says it tastes like a pizza and lasagna all in one. Take the wild plums (or tart cherries) and make little Dessert Tarts topped with a crumble and an icing drizzle. Craving Mexican but don’t have any tortillas? Make some! Fry up some bacon to use for a sweet and sour hot potato salad and end the night with Tim’s favorite recipe from childhood: his mom’s chocolate cake with chocolate icing, from scratch!

Chinese Take out at HOME! Break out the peanut oil and fry up some homemade egg rolls stuffed with fresh pork and cabbage. Cover some Tim Tim Shrimp in a sweet and spicy sauce for a mouth watering crunch that keeps you coming back for more. What's for dessert? It's as easy as they come. Fried Donuts rolled in cinnamon and sugar.
